Q.1:(08)
1.Which conditions are considered best for the fermentation of glucose?
(A) 35 °C, fresh yeast, absence of oxygen(B) 45 °C, yeast(C) 45 °C, absence of oxygen(D) 35 °C, fresh yeast
Answer: (A) 35 °C, fresh yeast, absence of oxygen
2.Monohydroxy alkanes are also called:
(A) Aldehydes(B) Alcohols(C) Ketones(D) Carboxylic acids
Answer: (B) Alcohols
3.Which catalyst other than H3PO4 can also be used for hydration of alkenes?
(A) NaOH(B) H2SO4(C) CH3COOH(D) Ni
Answer: (B) H2SO4 – alkenes are also hydrated with sulphuric acid.
4.Fermentation must be carried out in:
(A) Presence of oxygen(B) Absence of air (anaerobic conditions)(C) Presence of carbon dioxide(D) Presence of nitrogen
Answer: (B) Absence of air (anaerobic conditions)
5.Alcohol which has the maximum heat of combustion is:
(A) CH3CH2CH2OH(B) CH3CH2OH(C) CH3OH(D) CH3CH2CH2CH2OH
Answer: (D) CH3CH2CH2CH2OH (butanol, about 2676 kJ/mol; heat of combustion rises with chain length).
6.The temperature used in hydration of ethene is:
(A) 100°C(B) 200°C(C) 300°C(D) 400°C
Answer: (C) 300°C (with H3PO4 catalyst, 60–70 atm).
7.The most environment friendly fuel is:
(A) coal(B) kerosene oil(C) ethanol(D) wood
Answer: (C) ethanol – renewable and burns cleanly.
8.The fermentation reaction produces alcohol of concentration:
(A) 5%(B) 15%(C) 30%(D) 50%
Answer: (B) 15% – yeast stops working at about 12–15% ethanol (please verify with your textbook key).

(PART – I)
Q.2Write short answers to following questions.(6×2=12)
i.Give two advantages of burning of alcohols over the burning of fossil fuel?
  • Burn cleanly with little smoke and no sulphur oxides, so less pollution.
  • Renewable (made from plants) and nearly carbon neutral, so less greenhouse gas.
ii.Write the equation for fermentation of glucose.
C6H12O6 Zymase 2C2H5OH + 2CO2
iii.Which properties of ethyl alcohol make it useful for cosmetic industry?
It is a good solvent for fragrances, evaporates quickly (cooling effect) and acts as an antiseptic and preservative.
iv.How is ethanol prepared by hydration of ethene?
Ethene and steam are passed over H3PO4 catalyst at about 300°C and 60–70 atm:
CH2=CH2 + H2O H3PO4 CH3CH2OH
v.How is ethyl alcohol important for pharmaceutical industry?
It is used as a solvent for making medicines, tinctures and syrups, and as an antiseptic / disinfectant (hand sanitizers).
vi.Which alcohol has the maximum heat of combustion?
The alcohol with the longest carbon chain. Heat of combustion increases with the number of carbon atoms: methanol 726, ethanol 1367, propanol 2017, butanol 2676 kJ/mol.
(PART – II)
Note: Attempt the following question.
Q.3:Describe the preparation of ethanol by fermentation process.(5)
A dilute sugar solution (molasses) is mixed with yeast and kept at about 35°C, away from air, for several days.
Invertase converts sucrose to glucose and fructose:
C12H22O11 + H2O Invertase C6H12O6 + C6H12O6
Zymase then converts glucose to ethanol:
C6H12O6 Zymase 2C2H5OH + 2CO2
When ethanol reaches about 12–15%, the yeast stops working. The ethanol is separated by fractional distillation (about 95% pure, rectified spirit).
